Chef Adjo Honsou learned food the way many Togolese daughters do: by standing close to the pot, listening before speaking, and tasting until the tongue knew the answer.
Palm nut, pepper, plantain, rice, smoke, patience. The work was never just dinner. It was family memory, hospitality, and the first language of the courtyard.
